Was thinking of this the other day... I feel like there are similarities between trying to find starting pitchers and offensive linemen out of the portal.
They are in my opinion the 2 groups of players, in their respective sports, where it is the most difficult to come in and start day 1 as a freshman. That lends them to be more willing to work through multi year development plans and stick out original commitments.
The elite ones usually come at high NIL costs and are in high demand out of the portal when available. You're able to plug a hole here or there but its really hard to rebuild either group entirely in one cycle. It usually is a multi year process, built on recruiting/development, that gets you where you want to been, whereas batting lineups and skill position groups (WRs, RBs, DBs) can get turned over relatively quickly in the span of a single cycle.
