IMO, make a meat ball and salt, pepper, a little worcestshire and then SMASH that meatball on melted butter on ahot griddle or cast iron skillet.
Let it cook for a few minutes, the repeat on the other side.
Cook meat on the grill using my cast iron skillet just to avoid the smoke issue.

I forgot to bring it in from last night. Grilled some awesome ribeyes that were on sale at HT for $8.99 lb.
