how long will it last?

For regularity?
In moderation, yes. Calories from oats shouldn't be more than 10% of daily calories. Also must be cooked, either toasted or cooked in water. Raw oats can cause digestive issues.

Good vegetable choices include fresh peas, carrots, sweet potato (cooked), green beans, broccoli, cauliflower, pumpkin and cucumber. Raw is best except where noted and moderation is key, particularly with broccoli and cauliflower. None should be cooked with added salt or seasoning.
