Ireland/Scotland fly fishing?

I'm heading to Ireland and Scotland in August for a couple of weeks. Mostly village hopping with the wife and will definitely do a distillery visit or 4. I want to build in a day for fly fishing in both Ireland and Scotland. Anyone have any rec's on best areas/rivers or guides?
