What’s the relationship between signed letters of intent, guaranteed money, and immediate transfer?

So, I have gone through the 5 stages of grief and have been at acceptance for a while about the current state of college football (sports). It is no longer an amateur sport for good, bad, or indifference. It is a job. I have signed many employee/ employer letters in my career and received an agreed upon compensation for my time as I produced a service for each employer. I also have not worked under a non-compete clause. I could freely transfer companies with immediate eligibility.

Is this the same way the relationship between a student athlete and a university/collective operates now. There has been so much misinformation thrown around in CFB I’m genuinely confused. Is the money guaranteed or paid monthly. I read they have to declare income as taxable. Are there any performance bonuses? Let’s say player Z gets paid $5k a month. They get passed on the depth chart, and then refuse the practice/play. The coach can’t cut them like a boss would and replace them until the portal opens. But this is fair because no other coach can either, although not optimal for the team. This could be viewed as the trade deadline was missed.
